Fried deliciousness is nothing new to the Houston scene. Anyone who sets foot on the grounds of the Houston Livestock Show and Rodeo knows they can experience their favorite chocolates, cookies and childhood snacks deep-fried into warm, crispy, golden goodness. But at one Houston hotel, a gifted chef has incorporated this popular concept into his seasonal menu. Chef Shannen Tune of Revolve Kitchen & Bar at the Hotel Derek is launching a new summer menu featuring fresh, seasonal selections and one dish is so dynamic and extreme, it even blows some of our Rodeo favorites out of the water.

Along with the excitement of berry season, you may have noticed an overload of peach dishes at some of your favorite restaurants. Peach season is in full swing, and you will no doubt find some sweet selections of Fredericksburg peaches at your local farmers market these days. Sure peaches are great to add to salads and smoothies, but Chef Shannen goes above and beyond creating a peach dessert so decadent it will have your guilty conscience saying "...at least there's fruit in this!"
The fried peach donut begins with an entire Fredericksburg peach deep fried in funnel cake batter. On top, Tune places scoops of house-made peach jam and sweet caramel ice cream and gives it a final flourish of sliced peaches. I'd like to say I shared this hearty dessert with someone and it's big enough for two people, et cetera, et cetera. But when it comes to anything deep-fried in funnel cake batter, well... I inhaled this dessert on my own, and in record time, in fact.
We have all experienced the feeling of guilt after indulging in french fries, but at least you can typically stop yourself at just a handful. This dessert, however, is extreme in the sense that the deep-fried peach itself is about the size of a pool ball, and I can guarantee you won't stop yourself at the halfway point. While my health nut side and junk food addict side are constantly going head to head, I begin to wonder if this will this be the start of more deep-fried whole-fruit dishes. I'll tell you this much, as my junk-food addict side tends to win more battles, I'd like to see more fried fruit than fried Twinkies!
