Don't be fooled by the name of the show; it's not Bobby Flay that Sylvia Casares will be battling it out against this Thursday on Beat Bobby Flay. Instead, this week's episode of the popular Food Network show will feature a competition between Flay and Iron Chef Michael Symon, whereas Houston's own enchilada queen will be faced with a battle that hits closer to home.
This Thursday, Casares will make her national television debut in a competition against Dallas chef Braden Wages, best known for his work at Malai Kitchen. The Thai-Vietnamese fusion restaurant in the trendy West Village neighborhood has been buzzed about since opening in 2011, with reviewers citing Wages' deft use of spices in the hybridized cuisine. That could spell trouble for Casares, who's a spice whiz herself, and well known for the mole, salas and chile gravies she's made from scratch at Sylvia's Enchilada Kitchen since opening her first location 20 years ago. However, we have faith in our enchilada queen—and in her super-sharp kitchen skills, which she hones daily by teaching cooking classes in addition to running the three locations of her Tex-Mex empire.
