Not to take away from Wine Wednesday—we all deserve a glass or two, heck a whole bottle some weeks—but we think waffles are equally worthy of celebration. Yes, waffles were once for weekend brunch or special breakfasts, but in recent years, it's become a true carb contender with its versatility in sweet and savory dishes. Waffle fries, chocolate-dipped waffle cones, the croissaffle (half croissant, half waffle), it all works for us—we love waffles a waffle lot.

But food truck the Waffle Bus is our pick for celebrating Waffle Wednesday. Why? For one thing, the location changes every week. The popular food truck is a hit all over Houston for its dishes including buttermilk fried chicken-and-waffle sandwiches (with your pick of tangy sauce), sweet Nutella waffle sandwiches with fresh fruit, and of course waffle fries.

The waffle paradise on wheels puts to rest the misconception that waffles should only be enjoyed for breakfast, with the truck serving its popular savory sandwiches all around town both day and night. Often posted up at the University of Houston or at Inversion Coffee in Montrose, the truck is known to attract a waffle-crazed crowd on most days.

While Waffle Wednesday has a lovely ring to it, we encourage you not to discount the rest of the days of the week. Keep up with the truck’s weekly schedule by following @thewafflebus on Instagram and Twitter.
