The Spicy Chicken sandwich cometh.

Clutch City brings in a pop of Brooklyn pizzazz, or shall I say a pop-up of Brooklyn pizzas.

Renowned Dallas-based pizzeria, Cane Rosso, has invited the lauded restaurant Emily (and its little sister, Emily Squared) from Brooklyn for pop-up dinners at its locations throughout Texas. The cross-country exchange marks the first event in a series of Guest Chef Nights.

However, there is a plot twist. Despite the fact that all three restaurants involved are famous pizzerias, this pop-up dinner will focus on Emily’s favorably appraised Emmy Burger and Emmy Squared’s mouthwatering Spicy Chicken Sandwich. All proceeds go to Cane Rosso Dog Rescue, a dog-rescue charity started by Cane Rosso’s owner, Jay Jerrier in 2014. 

What prompted this friendly gesture? It started on a warm, summer day when Jay Jerrier and his culinary team traveled to Brooklyn and visited Matthew and Emily Hyland’s restaurants, after which they were so mind blown with the service and quality of food that they had to invite the Hyland’s to tour Texas with them this winter. Prior to the pop-up dinner at Cane Rosso in Montrose on January 12, there will be one at their Austin location on January 10 and another at their Deep Ellum location on January 9. Cane Rosso’s regular menu items will also be available.

According to Jay Jerrier, "The sandwiches were life-changing."

Matthew and Emily Hyland initially opened Emily in Brooklyn in 2014, which serves New York-style pizza. Once that took off, they opened up a Detroit-style pizzeria Emmy Squared in 2016. 

Their sandwiches have been featured on top burgers lists from several publications including Bloomberg, Esquire and Gothamist, among many others. All the more reason to come out to this event. Once the Emily restaurants go back to New York, we aren’t sure when they will be back just yet. Come now, or forever hold your peace.

“The sandwiches were life-changing. Imagine if a top-notch chef put all his energy into making sure every element of the sandwich was perfect—protein, bun, sauce, toppings. That’s what did it for me,” says Jerrier. The burger combines pasture-raised, dry-aged beef with caramelized onions, Grafton Village Cheese cheddar and cornichons on a pretzel bun. The Spicy Chicken crunches not just with the battered bird, but also pickles, radish and bok choy with salsa pico and ranch.

After the pop-up dinners with the Hyland’s restaurants, Guest Chef Nights will continue as Jerrier invites other favorite chefs to come up with a creative pizza as they all compete to sell the most pizzas. A portion of each chef’s sales will be given to a charity of their choosing.
