There is no better selection of meat in town than at this 54-year-old butcher shop that stocks everything from deer sausage to turduckens stuffed with crawfish jambalaya, all of it made in-house. It's also one of the few butcher shops in town to stock tri-tip, if you want to experiment with the cut made popular in California. Even a Texan can appreciate the classic "Santa Maria steak," which isn't too far removed from our own barbecue style.
