Although there’s plenty of meat to be found on the menu at Blue Nile, Houston’s best Ethiopian restaurant, it’s the tremendous vegetable platter that we can’t resist ordering on every single visit. The mother-and-daughter team who run the restaurant insist on importing their spices and other ingredients from Ethiopia, giving a visceral boost to even the simplest of dishes: slowly simmered lentils, stewed cabbage and carrots, or braised collard greens—all of which and more are heaped on the inexpensive vegetable plate big enough for two. Rounding it out are sheets of injera, a flatbread made from teff that is both gluten-free and packed with all the amino acids necessary to fill it with complete proteins … no meat needed.
