The cool crudos at Caracol, chef Hugo Ortega’s beguiling Galleria-area restaurant, may be the perfect antidote to the summer heat. Among the offerings: lime-cured Gulf shrimp, and a tuna ceviche that delights with bright notes of ginger and habanero and a crunch of macadamia nut. But our favorite is the delicately plated ceviche de caracol, with its slivers of tender conch curled into tight buds, crowned with vivid red jalapeño and cubes of pineapple. Enjoy it with a cool cocktail in the crisp, refreshing dining room, decorated with cheerful Charlie Harper paintings of giant squid and other whimsical fish.
