No other restaurant in Houston is turning out raw seafood dishes to match the inspired creations at Cove, where chef Jean-Philippe Gaston deftly constructs globally inspired dishes ranging from marinated Greek octopus to ika mata—fish, whatever’s fresh, in a tropical lemongrass–coconut milk broth—from the Cook Islands in the South Pacific. Sure, there’s crudo and ceviche on his all-raw menu, but it’s more fun to let Cove dazzle you with salmon cured in brown sugar and lemon zest, or tuna hopped up with slices of dehydrated jalapeño and radish. The intimate, 30-seat crudo bar is tucked inside Haven, where Gaston is the chef de cuisine—but the menu is entirely separate, and only served at dinner. Grab one of the coveted seats at the bar, where watching Gaston plate his dishes with all the studiousness of a sushi chef is half the evening’s entertainment.
