At Handies, Uchi graduates and Kokoro co-founders Patrick Pham and Daniel Lee carefully assemble their creations. Smell the fresh seaweed as you bite into the cylindrical roll—crunchy on the outside and just warm enough from the sushi rice inside. We suggest ordering the set of five rolls, which includes salmon, fatty tuna, avocado, and—our two favorites—crab, and spicy tuna, stuffed with fried shallots for that extra crunch.
