Keeper Lin spent two decades as a sushi chef at two of Houston’s well-regarded Japanese restaurants before opening his own place in Sugar Land, Keeper’s Japanese Cuisine, a few years ago. While locals may grouse about the high prices, we think the cost is in keeping with Lin’s considerable talent, his fresh fish, and the restaurant’s chic decor. While there are plenty of excellent traditional Japanese dishes on the menu, from oyakodon to ramen, we also like the more inventive options: shrimp lagoon—egg rolls stuffed with shrimp, asparagus, and cream cheese in a sweet wasabi sauce—and hannah age, featuring diced tiger shrimp, papaya, and shiitake mushrooms wrapped in rice paper, deep-fried, and served in a spicy teriyaki sauce.
