The slogan at chef Kiran Verma’s immaculate restaurant says it all: “Traditional Indian cuisine, modern chef.” Verma’s food speaks to a Texan palate—her menu includes rack of lamb, porterhouse steak, and Texas quail—with a fresh Indian twist. That Texas quail is served with a mixed berry chutney, for example, and bison meatballs are cooked in a tandoor and served in rogan josh sauce. Lunch is served on weekdays, as is afternoon tea, which includes both Indian and British offerings.
