When he opened Latin Bites in the small, 30-seat restaurant that now houses Oxheart, Peruvian-born Roberto Castre figured his modern Peruvian cooking would be a tough sell in Houston, but he was wrong. “You can find a lot of different cultures here,” he says, “and that helps a lot because people are more open to trying different types of foods.” In fact, the city has been so receptive to Castre’s causastiraditos, and Peruvian ceviches that Latin Bites relocated to a swanky new space in Tanglewood. Castre has developed such confidence in Houston’s palate, he has plans to open a standalone cevichería next.
