Perry’s is a locally grown steakhouse chain that lacks the razzle-dazzle of some of Houston’s other high-profile steakhouses. You might say it’s all about the steak, not the sizzle. The selection is standard-issue—filet mignon, rib-eye and New York strip, all USDA Prime, and available bone-in or sans bone. But the signature dish is the pork chop, a giant slab of pig flesh that’s cured, smoked and caramelized, then carved tableside.
