Perry’s is a locally grown steakhouse chain that features both standard-issue items—filet mignon, rib-eye and New York strip, all USDA Prime, and available bone-in or sans bone—and flashier fare like flaming desserts. But the signature dish is the pork chop, a giant slab of pig flesh that’s cured, smoked and caramelized, then carved tableside.
