Perry’s is a locally grown steakhouse chain that lacks the razzle-dazzle of some of Houston’s other high-profile steakhouses. You might say it’s all about the steak, not the sizzle. The selection is standard-issue—filet mignon, rib-eye and New York strip, all USDA Prime, and available bone-in or sans bone. But the signature dish is the pork chop, a giant slab of pig flesh that’s cured, smoked and caramelized, then carved tableside. Head over at lunchtime for “Pork Chop Friday” (check to make sure your location is open at lunch on other days of the week) to get a lunch cut of the pork chop for the bargain price of $11.95.
