Pizaro’s is so serious about producing authentic, Neapolitan-style pizza, co-owner Bill Hutchinson traveled to Italy to study under its master pizza-makers. In fact, he’s certified as a pizzaiolo by the country’s Association of Authentic Neapolitan Pizza. The crusts here are so light, crispy, and tender, they seem like a cross between puff pastry and pizza dough. Some of our favorites include the Fino (cured fennel sausage, goat cheese, garlic, olive oil, and mozzarella) and the Fume (speck, garlic, smoked mozzarella, and olive oil). BYOB is encouraged, so bring your own wine or cold beer to pair with your selection and look for glasses on the baker’s rack near the front of the shop. (If you abhor eating salad with a plastic fork, bring your own silverware, too.)
