Texas barbecue is experiencing a surge of attention—something Vince Wilfork, one of the best defensive tackles in the NFL, knows a little something about. However, it wasn't Wilfork's skills on the gridiron that propelled a video of the football player to viral heights last Memorial Day weekend. Instead, it was a short YouTube video shot surreptitiously by his wife, in which Wilfork jammed to Houston's own Lil Troy while tending to his barbecue pit. Fans went crazy for the behind-the-scenes look at a famous football player who, at least on the weekends and at least in front of a smoker, was just like them.

This past March, Wilfork signed a two-year contract with the Houston Texans, leaving behind an entire career spent playing for the New England Patriots. For the Florida native, it was a bittersweet departure. His 11 years with the Patriots brought him two Super Bowl wins, but it also meant enduring Boston's harsh winters and even harsher lack of barbecue.

We're not saying that Wilfork, a noted smoked meat enthusiast, necessarily took the Texans' deal because it meant being closer to his beloved barbecue, but we'll let the man speak for himself in another behind-the-scenes video, this one filmed during a cover shoot for an upcoming issue of Houstonia—our big, bad barbecue issue, hitting newsstands and mailboxes on August 4. (Okay, so it's not as big as Wilfork, but the man's a living legend.)
