Culinary Institute of America grad Hilda Ysusi plied her trade in research and development and the corporate cheffing world before breaking out on her own with her creative wine bar and gastropub. The Mexico City native takes influences in equal parts from Asia, the Mediterranean and Latin America, resulting in eclectic dishes like a duck banh mi with pickled veggies and carrot hummus.
