We tried to dine at Republic Diner + Sojubang in July, when a sign on the door said it would be temporarily closed. We tried again in August, then September. The outlook was not favorable. It was a very pleasant surprise, then, when we got a brief press release from Delicious Concepts CEO Ken Bridge saying that the restaurant will reopen as Republic Diner + Noodle Bar on Tuesday, October 3.
The menu retains its Korean core of dishes like bibimbop, galbi and house-fermented kimchi. In addition, ramen will now be among the offerings. Classic flavors such as tonkotsu and spicy miso are joined by chef-operating partner Billy Kin's unique combo of kimchi and cheese.
