We tried to dine at Republic Diner + Sojubang in July, when a sign on the door said it would be temporarily closed. We tried again in August, then September. The outlook was not favorable. It was a very pleasant surprise, then, when we got a brief press release from Delicious Concepts CEO Ken Bridge saying that the restaurant will reopen as Republic Diner + Noodle Bar on Tuesday, October 3.

The menu retains its Korean core of dishes like bibimbop, galbi and house-fermented kimchi. In addition, ramen will now be among the offerings. Classic flavors such as tonkotsu and spicy miso are joined by chef-operating partner Billy Kin's unique combo of kimchi and cheese.

Need enticement to try the ramen on the very first day? It's free. At least to the first 50 customers. Those same diners will also get a limited-edition T-shirt to celebrate the opening.
