Four Chefs With Brennan's of Houston Roots Join Forces Again

Four chefs with Brennan’s of Houston roots are getting the band back together and taking it to Sugar Land.

Mark Holley (formerly of Pesce), Randy Evans (Haven), Jon Hebert (Houston City Club), and current Brennan’s chef Danny Trace will collaborate on a dinner at the Sugar Land Wine & Food Affair. It’s the 10-year anniversary of the event. The dinner, called “A Family Affair,” will be held at the former Imperial Sugar Factory in the specially constructed Gallery Furniture Pavilion.

Dishes will be paired with premiere vintages of wines from Sterling Vineyards, Far Niente, Winery, Iron Horse Vineyards, Stag’s Leap Wine Cellars, and Frank Family Vineyards.

Chef Randy Evans says he’s excited about the reunion. “We are meeting next week to discuss menus. It is basically a taste of the last three decades. John was a sous in the late ’80s where men where men and everyone in the kitchen was scared. Mark Holley hired me as a cook at Brennan's while he was exec sous in the mid-’90s.

Not many places to do quality food and service at such a high volume like Brennan's does. The number of successful chefs that have come out of that kitchen is a testament to that. The place is an institution and will always be a mainstay for fine dining in Houston and a place where young cooks go to hone their skills in hopes of being a great chef one day.”

The dinner will be held on Wednesday, April 24, at 6:30 p.m.
