The H-Town Gut Pack: Only at Revival Market This Saturday

This twisted take on a Frito pie features chopped brisket sausage, house-made corn chips, and more.

You may recall a few weeks ago that we introduced Houstonians who hadn't had the pleasure of living in Waco to the Gut Pak, a gloriously over-the-top twist on that old Texas classic, the Frito pie. At the 99-year-old Vitek's, a Waco barbecue joint that's been serving Baylor University students for nearly a century, the Gut Pak is the best-selling dish: a standard Frito pie topped with Vitek's chopped barbecue brisket, chopped sausage, beans, pickles, and jalapeños. We also challenged Revival Market owner Morgan Weber—a Baylor alum and Gut Pak aficionado—to come up with his own version to sell at his store in the Heights.

That day has come.

Tomorrow only, you can get Revival Market's version of the Vitek's Gut Pak, which its calling the H-Town Gut Pack (note the slightly altered spelling, perhaps in deference to Vitek's unimpeachable original version). In lieu of Fritos, Revival is using its own house-made corn chips, chopped house-made barbecue brisket sausage, heirloom beans, farmstead cheddar cheese, and—naturally—house-made jalapeños. Would you really expect anything less from Revival?

The H-Town Gut Pack will be available starting at 11 a.m. tomorrow. And if you're a Baylor alum or fan, that means you'll have plenty of time to get a Gut Pack for lunch before the game starts at 3 p.m. tomorrow, when the Bears play the Kansas Jayhawks in Waco. And if you're looking to watch the game over a few Big O's—the 18-ounce draft beers found in plentiful supply back in Waco at George's Restaurant—we recommend heading to Alice's Tall Texan Drive Inn, where ice-cold Shiner Bock and Lone Star is sold in 18-ounce goblets for only $1.25 each.
