As Houston continues its thaw after Icepocalypse 2018 and some semblance of normality returns, the bar community is in for a treat. Making his way from the eastern seaboard, Gn Chan is traveling in a very groovy ’77 yellow Volkswagen camper. Chan will bring his expertise in cocktail mixology to Houston for a one-night pop-up in which he invites patrons to partake in a three-cocktail menu, all from the comfort of his camper. He calls it Double Chicken Please.

After graduating from college Chan took up bartending and realized there was an opportunity to bring his two passions, designing and performing, together. Wanting to push and challenge himself he moved to New York City and started from scratch. He worked at four different bars and restaurants around the city before landing at Angel’s Share, a legendary speakeasy in the East Village. He went on to win the 2016 Bacardi Legacy Cocktail Competition and currently travels around the world with Bacardi showcasing his passions and skills.

Double Chicken Please is Chan's brainchild and the name of the bar he plans on opening in New York in the near future. Double Chicken is inspired by hacking design, a concept centering on deconstruction and redefining the definition of food and beverage, mixing different ingredients to rebuild a creation in a quirky way. Quirky also describes his answer when I asked how he came up with the name.

“The name is actually from the design studio I was suppose to open 10 years ago with my best friend, ‘Turkey’, in Taiwan," said Chan. "My nickname was ‘Chicken Fillet’ hence the name, Double Chicken Please.”

But before Chan finds Double Chicken’s permanent residence in NYC, the yellow time capsule will be popping up all around the country, including Houston at Johnny’s Gold Brick on January 29, from 1 p.m. to 1 a.m. To be a part of this intimate and unusual cocktail experience, visit the Double Chicken Please website for more information.
