Hiring is underway at Rosalie, the all-new Italian concept from Top Chef Masters winner Chris Cosentino set to open in September at the C. Baldwin Hotel. But the top of the staff list has been filled.
Sasha Grumman, previously the chef de cuisine at famed Austin restaurant Launderette, has been named executive chef of Rosalie. She trained at the French Culinary Institute in New York and ALMA in Parma, Italy, and spent time in San Francisco and Los Angeles before moving to Austin. While in the Bay Area, she worked with Cosentino at his restaurant Cockscomb.
“She was a force when she ran the grill station at Cockscomb," said Cosentino. "She can outcook almost anyone, and she has the ability to manage in a calm and thoughtful way.”
Grumman joins Annie Balest, general manager of Rosalie (formerly of Tony's) and Charlie Skipsey, who is assuming the role of director of restaurants for the C. Baldwin Hotel. The hotel's entire food and beverage program will be run by Cosentino and Oliver Wharton's Delicious MFG. & C.O.
Over at new downtown food hall Understory, cocktail bar Silver Lining is now open. The bar from Roveen Abante and Florenico Jopio III of Lincoln Bar is the first standalone bar at Understory. Look for original cocktails from mixologists Robby Cook and Omar Villavivencio, plus classics, wine, craft beer, and more. Right now Silver Lining is in the soft-opening phase, but it will go full-time starting Aug. 12, when Understory celebrates its grand opening.
The first Texas location of Off The Hook, a quick-service Cajun restaurant founded in Thibodaux, Louisiana, is now open at 125 Remington Valley Dr., just off I-45 about 2.5 miles north of Highway 8. Off The Hook does gumbos, po'boys, fried fish baskets, and other Cajun delicacies.
Radunare, a family style Italian restaurant, is now open in The Woodlands. Look for an all-day menu with breakfast dishes and Italian-inspired favorites (bruschetta boards, paninis), plus pasta dinners and pizza, and a full bar. Open 7 a.m.-9 p.m. Sunday-Thursday and 7 a.m. to 10 p.m. Friday-Saturday at 2520 Research Forest Drive, #500, in the Woodlands.
It's that time of year: King's Biergarten's Sausage Fest is underway. That means $9.95 gets you all-you-can-eat sausage, from traditional fare like Polish wurst and spicy kielbasa to more exotic fare, like alligator and rabbit and rattlesnake. Plus, there are plant-based options (apple sage is pretty darn good). Ongoing through the end of August at King's Biergarten and King's Bierhaus.
