the season of growth is now for Netflix’s The Final Table star and acclaimed Houston chef, Aaron Bludorn. He recently acquired a lease in Rice Village for a new concept that will debut summer 2022. Within the last year, Bludorn has gained local notoriety from cooking New American and French-inspired dishes, to collaborating with fellow Houston entities. His flagship restaurant, Bludorn, a neighborhood diner in Fourth Ward, was our pick for Houston’s Best New Restaurants in 2020.
After much success, chef Bludorn is planning to broaden his ventures. "From the moment we decided to relocate to Houston from New York, our goal was to open multiple concepts, and the opportunities we knew the city would provide to do that was key in choosing the Bayou City over other locations to plant roots," Aaron Bludorn says in a media release.
The Houston-based chef will be joined by his wife, restaurateur Victoria Bludorn, and General Manager/Partner, Cherif Mbjodi, as they utilize the 7,100 square foot, former mid-century modern home of Politan Row food hall. Despite the pandemic, the trio led Bludorn into top rankings for one of the country’s most buzzed-about restaurants since August 2020. It is likely that their new project will once again draw a large audience.

The new concept will be a welcome addition to brand extensions including Bludorn Catering and Events and Bludorn at Home, an upscale, chef-prepared meal program showcasing the restaurant’s most popular dishes and holiday specials. It will also join several unique local dining options like Roma, Sof Hospitality Group’s Badolina Bakery & Cafe, Clark Cooper Concepts’ Coppa Osteria, and other longtime classics.
