Like all good Houston food lovers, nothing makes our hearts race quite like a good ol’ chef collaboration. It’s been happening for a while now—our favorite chefs put their heads together and produce wonderful one-night events where tickets sell out before we even know it’s happening and we’re left wondering if it will ever happen again. Well we have another one coming up, and this time it’s for us barbecue lovers.
On July 18th, Wesley Jurena (Pappa Charlie's Barbeque), Patrick Feges (Southern Goods/Feges BBQ) and Erin Smith (Chopped champion and former chef at Main Kitchen at the JW Marriot Downtown and Plonk! Bistro) are teaming up for the “Collaboration of Smoke” dinner at Pappa Charlie's Barbeque in east Downtown. This will be a four-course, family-style seated dinner with wine and beer parings.
Not your typical brisket/rib/sausage plate dinner, "Collaboration of Smoke" is going with an “elevated 'cue” theme and will begin with a reception featuring smoked meatballs with Prosecco or cava, followed by honey butter biscuits, smoked Gulf shrimp and grits, smoked pork prime rib with mostarda greens and smoked apple cherry-glazed duck breast with Brussels sprouts. The feast is will conclude with chef Smith’s Chopped-winning dessert, basil-marinated watermelon pound cake with huitlacoche ice cream. Nope, not your typical backyard barbecue.
A rarity as far as pop-ups go, this is actually the third year for this event, which started in 2014 as a counter service pop-up called “Some Traditional Que, Some Not.” Back then, Jurena was serving his barbecue out of a trailer parked in front of Jackson’s Watering Hole in Montrose, while Feges was mastering his craft as an apprentice at Killen’s BBQ.
Tickets are available here for $95 per person. Better to get them sooner rather than later, because you know they’ll sell out.
