Bosscat Kitchen & Libations, a Southern California whiskey bar with American comfort food is expanding to Houston for its second location. Bosscat’s owners, executive chef, general manager and bar manager are so committed to the opening this fall at 4310 Westheimer Rd. that  all relocating from Newport Beach to establish Houston as their new home.

“I love Houston,” states owner John Reed, who could have opened a second location in California, but decided on Houston during a visit to Texas. “I love how the people here really get behind localized concepts. We hope that Bosscat can be a place that’s warm and welcoming to everybody in the neighborhood.”

The defining feature of Bosscat will be a glass-enclosed whiskey room that will contain more than 350 whiskeys, a private dining room, and 40 whiskey lockers for VIPs. Adjacent to the whiskey room will be an in-house “mini rickhouse,” a new feature for the Houston location, where high rollers can make and store their own barrel-aged cocktails. The 360-degree center bar will feature 10 to 12 signature cocktails along with a full bar and 10 beers on tap.

Despite the concept's California motherland, the cuisine will be resolutely Houstonian. Dishes will be built around local ingredients from 44 Farms, Black Hill Meats and Kraftsmen Baking, among others. Items planned for the Houston location include a barbecue porchetta sandwich; the signature Bosscat Burger with bacon, cheese and black garlic sauce; Cajun brick chicken with dirty rice; and a beef short rib braised for 12 hours with an Asian black pepper sauce.

Using local ingredients and focusing on the feel of the neighborhood is definitely a good way for these Southern California transplants to get in good with Houstonians…although the whiskey helps too.
