FM Kitchen and Bar began its soft opening yesterday. It will have its official grand opening on Friday. Needless to say, it is not November, approximately when co-owners Ryan Hildebrand and Chong Yi thought the restaurant would open. The team behind Triniti have had many changes to contend with since then. Their original, upscale restaurant closed for good in February after five years of service. But the happy news is the delayed FM is far more than chef Hildebrand expected it would be when we first discussed it with him last summer.

Originally, Hildebrand described the business he called FM Burger as an icehouse dedicated to $4.99 burgers. And there are simple roadside-style burgers on the menu. But we didn't expect the more refined fare, equalled in the bar by craft cocktails along with the loaded roster of local beers.
