Chef Michael Mina and the flavors of International Smoke will be in Houston on Sunday.

Opening a restaurant requires a certain amount of flexibility. Life is chaos, and you have to be ready to adapt when forces outside your control arrive to mess with your best-laid plans. From severe weather to construction to your significant other being in a competitive sports rivalry against the city you’re expanding into, life comes at you fast. And if you’re wondering why that last disruption feels maybe a touch too specific, it’s only because International Smoke, a new concept coming to CityCentre from celebrity chef Michael Mina and actress/celebrity cook/TV personality Ayesha Curry. Yes, her husband does play basketball for a living. He’s even in Houston tonight for something or other.

The first International Smoke has been open in San Francisco for a bit, and now they’re hoping to find success in the Houston market. The plan is to open International Smoke next month, but if they have your attention now, there is good news: Chef Mina will be in town this weekend for a preview pop-up.

Sunday evening the International Smoke team is taking over Hugo’s to show off some of the many flavors that’ll be available once International Smoke is open for business. Items that will be available include: ribs with barbecued oysters; Gulf snapper with fermented black bean and fried rice; instant bacon steamed buns; Tom Kha shooters with curry cornbread; burrata with sugar snap and speck; shaking beef lettuce wraps; and Galbijjim Korean short ribs.

The pop-up lasts from 6 p.m. to 9 p.m. this Sunday, May 20. Tickets are $30 and include food and a cocktail (a cash bar will be available). If you’re looking to avoid game 3 of the Rockets/Warriors series, it sounds like it’ll be a pretty good distraction. Get your tickets here.
