One of the most anticipated restaurant projects in Houston is about to open.
Agricole Hospitality (partners Ryan Pera, Morgan Weber, and Vincent Hyunh), one of the heaviest hitters in Houston food (Coltivare, Revival Market, Eight Row Flint), has set dates for the launches of their three EaDo concepts: Vinny's, Indianola, and Miss Carousel. And they are soon. Really soon.
The first to open is Vinny's, a 50-seat counter-service pizza place (30 inside, 20 patio) that doesn't want to box itself into a theme. The square pies, however, will fit perfectly in a box. Specialty pies include M.C. Ham'r'd, combining Benton's Country Ham, Wisconsin Brick cheese, caramelized onions, mushrooms, oregano, and black pepper. Or maybe you want the Muscles from Brussels, using Brussels sprouts, Fat Back bacon, sweet onion puree, provolone, and pickled red onions?
All the pies (with dough made by in-house baker John Weatherly) are made using a spiral mixer and baked in a Woodstone oven. And heck yeah, pizza will be available by the slice. They'll be popular among the bar crowd on Friday and Saturday nights, as Vinny's will be open until 3 a.m. on the weekends.
Next will come Indianola, opening November 6 and focusing on "modern American" fare—as in, anything from anywhere goes. The 3,000-square-foot restaurant will seat 100 inside and 30 on the patio.
Dinner will include wood-grilled Santa Maria steak with tomatillo escabeche and Thai-inspired Som Tum salad, while breakfast will have the suddenly ubiquitous shakshuka, huevos rancheros, and Chinese rice porridge. The wine list pulls mainly from North America, plus less-known wine regions (think Central Europe). Paul Lewis will lead the kitchen as executive chef, while Natasha Douglas heads dessert. Her offerings include a Spanish Basque cheesecake, a lemon tart inspired by Revival Market's cold-brew lemonade, and a passion fruit pot de creme combining Spanish and Japanese ingredients.
Lunch will begin at Indianola after a few weeks, and breakfast will kick off at some point after that. Dinner reservations begin November 5.
Finally, Miss Carousel will open November 8. A bar-first concept, it'll lean on inventive cocktails developed by Weber, beverage director of Agricole. About two-thirds of the menu (25 to 30 cocktails) will be original to Miss Carousel. A small food menu concentrates on elevated bar snacks (crispy duck wings, carrot and beef tartare), with some room for bigger dishes (a wagyu burger, for one). And there will be boozy desserts.
Mid-century furniture and accessories sourced from across the world (century-old rugs from Morocco, brass light fixtures from Paris) aim to give the bar a homey aesthetic. It'll be open 4 p.m. to 2 a.m. daily.
